ingredients

2 beautiful (400 g) golden apples
2 very sweet oranges
2 tbsp. to s. lemon
2 2 yolks 2 egg whites
3 dl of skimmed milk
30 40 g of fine sugar
1 1 tbsp. to c. rase (10 g) of Maïzena
Butter
Icing sugar

1 salad bowl
1 propeller robot
1 electric whisk
1 fine strainer
1 or 2 non-stick frying pans
1 zester knife

Steps

Step 1

Prepare the cream : take the orange zest in fine filaments, press 2 dl of juice. Beat 2 yolks and 30 g light cream sugar. Dust 10 g Maizena through the colander, mix. Heat the milk, just before boiling, pour it gently over the yolks while turning; add the orange juice. Heat in a saucepan over medium heat until creamy.

2nd step

Prepare the dough : peel, cut in 4, seed the apples. Chop them to the robot. Add the zest and lemon. Put 2 yolks in a bowl; drop 1 tbsp. to c. from Maïzena through the strainer, mix. Whip the whites and a pinch of salt in very firm snow; add 40 g sugar, beat 1 min; mix with the yellows by turning from bottom to top, go well to the bottom. Mingle with apples, turning in the same way.

Step 3

Cook immediately : put some spoon. to c. of dough in the pan very slightly buttered. Flatten them a little; cover, cook over low heat. When the bottom is golden brown, turn gently, brown the other side.

Step 4

To serve : just powder the gnocchi with icing sugar, present the cream separately.
