Industrial proteases
There are proteases that are used by the agri-food industry. Thus the food additive E1101 can come from different sources such as ficus, papaya or asparagus. It is found in most flours. Veal rennet is a digestive protease that is intended to tenderize meat, to refine cheeses or to ferment alcohol. These proteases also have use as a flavor enhancer.

The usefulness of proteases
Digestion is a complex mechanism involving many organs and biochemical phenomena. Proteases, as well as lactases, lipases or even cellulases, are essential for the digestive system. Without proteases, dietary proteins could not be absorbed. There are proteases all over the body, from saliva to the intestine, through the stomach. By dividing the proteins, energy is produced. This energy is then distributed to different organs and tissues. Proteases also enter into action for coagulation and tissue healing. They allow cell reconstruction. Some proteases, such as botulinum toxin, can be toxic.
