ingredients
800 g beef
100 g fresh lemongrass
30 g fresh galangal (or ginger)
15 g fresh turmeric
80 g peeled shallots
80 g chives
1 chili pepper
2 cloves garlic
The zest of 1/6 of kaffir lime
7 cl of nuoc-mâm sauce
25 g of sugar
2 tbsp. to s. sunflower oil
Steps
Step 1
Chop or cut lemongrass, galangal, turmeric, shallots, chives, peeled pepper, peeled garlic, lime kaffir rind.
2nd step
Mix it in a small propeller with the nuoc-mâm sauce, sugar and oil, to obtain a soft dough. If necessary, add a little water.
Step 3
Slice the beef into strips about 1 cm thick. Marinate them for 1 hour in the dough.
Step 4
Thread the strips by folding them without squeezing on skewers. Grill on the grill or under the oven grill.
Sprinkle with chives.

Virginia's thing:
The lemongrass / galangal / turmeric paste is kept in a glass jar for 2-3 days in the fridge.
Serve with chilli sauce (rayon or Asian grocery).
